Delicious Refrigerated Pickles!
These refrigerated pickles are so delicious, healthy, crunchy and crazy easy to make!
All you need is..
- Some cucumbers to fill a quart jar (We used the miniature kind)
- 1 cup of white vinegar
- 1 cup of water
- 2 Tablespoons of kosher salt
- Some sprigs of fresh dill
- 5 peppercorns
- Sliced garlic to your liking
Stuff the dill, peppercorns, garlic and cucumbers into your jar. In a saucepan, add the vinegar, water and salt. Bring to a slight boil, making sure the salt is dissolved. Remove from heat and pour over the cucumbers until covered. Place a lid on the jar and leave at room temperature until cooled. Tip: Make sure you place the jar on a wooden surface to cool! If you place it on cold tile, marble or any other cold surface, the jar may crack! You can eat them right away, but they are better if you wait a few days so the flavor develops. Store in the fridge for up to a month if they last that long 😁 Hope you give them a try and love them!
We are going to try making it using watermelon rind. G-ma

DeleteLove the tip on placing the hot jars on a wooden surface. Makes so much sense but I would have never thought of that. Hopefully we'll get to try G-ma's rinds!!! Hint hint hint!
